Amaranth is an ancient pseudograin which has been used for millennia for its leaf and its seed. It can be produced as a sprout or Microgreen.  The seeds are tiny which produce a deep red sprout or micro green offer seen in Restaurant mixed salad garnishes.

Amaranth is an ancient pseudograin which has been used for millennia for its leaf and its seed. It can be produced as a sprout or Microgreen.  The seeds are tiny which produce a deep red sprout or micro green offer seen in Restaurant mixed salad garnishes.

 A simple container with drainage holes or seed tray is ideal.

A small amount of compost or blotting / kitchen paper can be utilised.

The seeds are best in a warm sunny location for germination (Greenhouse in summer / sow facing draft free windowsill)

Soak seeds in water for 4-8 hours and scatter them in a thick layer on growing medium pressing them firmly down.

Water thoroughly and cover with wet newspaper.

Water once per day through the newspaper until the sprouts push up the paper (2-4 days), then remove the paper.

Harvest at 1-2 inches in height with scissors, rinse, shake dry and store excess sprouts in fridge in sealed bag or container.
